I would mail thank you letters to each individual interviewer within days of the interview to optimize your timing. If the interviews went well and they liked you, it can be a kind of "one-two punch" to hammer home your strength as a candidate. Many programs will include these letters in your file for future reference.

I've always kept my thank you letters somewhat brief but with specific reference to topics addressed in the interview and aspects of the program I was impressed with, keeping it personal to that particular individual. I would open with a quick "thank you" paragraph followed by another that includes things about the program you liked, etc. Of course, using a standard business letter format is a good idea, with your original signature.
